Fritaja with wild asparagus
Who has not tried fritaja with wild asparagus, has not met Croatia in spring. Asparagus will remind you with its slightly bitter taste of macchia, rocks, pines, the smell of the sea and aromatic plants.


Wash the asparagus, separate the soft part off the stem with the tips and break it into smaller parts. Cook them in boiling water for 2-5 minute.
Finely chopped onion briefly sauté in oil, add prepared asparagus, salt, pepper and sauté until the asparagus gets soft.
Add stirred eggs , additionally stirring and bake till it is done.
Serve immediately with home-made bread.
You can sprinkle fritaja with grated goat or sheep cheese, as desired or ad a ham.

1/2 teaspoon pepper
8 eggs
6 tablespoons olive oil
